Kombucha

Sweetened tea transformed by a culture of bacteria and yeasts.

Kombucha begins with sweetened tea and a mixed culture. Yeasts produce alcohol; bacteria use oxygen to turn some of that alcohol into acid. A sour taste alone does not tell you the alcohol level. University of Georgia: Homemade kombucha

What happens after bottling?

Fermentation can continue. Pressure and alcohol need attention as well as flavour.
