Vinegar

Alcohol becomes the bright acidity used in dressings and pickles.

Alcohol + oxygen + acetic acid bacteria → vinegar

Acetic acid bacteria use oxygen to transform alcohol into acetic acid. That makes vinegar production different from a vegetable ferment kept below brine. NC State Extension: Vinegar making

Making vinegar and using vinegar to pickle vegetables are separate processes. Home-made vinegar has an uncertain acidity; use the vinegar specified in a tested canning recipe. NCHFP: General information on pickling

Making vinegar or using it?
